Blueberry Crumble
3 cups blueberries, fresh or frozen
2 Tbs Kodiak buttermilk pancake mix or all-purpose/GF flour
1 Tbs sugar or sugar substitute
Preheat oven 375.
Mix above in baking dish; set aside.
Topping
3/4 cups Kodiak buttermilk pancake mix (of all purpose/GF flour)
3/4 cups rolled oats
1 heaping Tbs brown sugar
1/2 tsp ground cinnamon
Combine dry topping, then stir in:
1/3 cup melted trans-fat free margarine (I love Earth Balance!)
Crumble over the top of your blueberry mix. Bake 15-20 minutes until topping is golden brown.
