Black Bean Tacos

2 garlic cloves

1 can drained, rinsed black beans

1/4 cup oats

1/4 cup cornmeal

1 Tbs chili powder

salt & pepper to taste

Heat oven to 400. Coat baking sheet lined with parchment with canola spray. Process garlic in food processor with drained black beans. Pulse until mostly chopped/somewhat pureed. Add oats, cornmeal, chili powder, salt & pepper; pulse until combined.

Crumble onto baking sheet and spray with canola oil.

Bake 10-12 minutes. Use spatula to flip beans and spray again with canola oil. Bake 10-12 minutes more.
